Bang Bang Chicken Skewers are flavorful grilled chicken thigh pieces marinated with smoky spices and served with a creamy, spicy-sweet Bang Bang sauce. Ingredients

For the Chicken Skewers

  • 1 ½ lbs boneless skinless chicken thighs, cut into 1-inch pieces
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon smoked paprika
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • Wooden or metal skewers

For the Bang Bang Sauce

  • ½ cup mayonnaise
  • ¼ cup sweet chili sauce
  • 1 tablespoon sriracha
  • 1 tablespoon honey
  • 1 tablespoon lime juice


Instructions

  1. Prepare the Skewers: If using wooden skewers, soak them in water for at least 30 minutes to prevent burning. In a large bowl, toss the chicken pieces with olive oil, garlic powder, smoked paprika, salt, and pepper until evenly coated.
  2. Thread the Chicken: Thread the seasoned chicken pieces onto the skewers, leaving a small gap between each piece to ensure even cooking.
  3. Preheat the Grill: Heat a grill or grill pan over medium-high heat until hot and ready for cooking.
  4. Grill the Chicken: Place the skewers on the grill and cook for 10–12 minutes, turning occasionally to cook evenly. Grill until the chicken is thoroughly cooked and has a nice charred surface.
  5. Make the Bang Bang Sauce: While the chicken cooks, whisk together mayonnaise, sweet chili sauce, sriracha, honey, and lime juice in a small bowl until smooth and well combined.
  6. Serve: Once the chicken is cooked, brush the skewers generously with the Bang Bang sauce or serve it on the side as a dipping sauce. Garnish with chopped green onions or cilantro if desired.

  • For extra heat, increase the sriracha in the sauce to 2 tablespoons.
