Description

Bread and Filling

  • 8 slices soft white bread, crusts removed
  • 2 ripe bananas, sliced

Egg Mixture

  • 2 large eggs
  • 1/4 cup milk
  • 1/2 teaspoon vanilla extract
  • 1/2 teaspoon ground cinnamon

Toppings

  • 1 tablespoon granulated sugar
  • Pinch of extra ground cinnamon
  • 2 tablespoons butter

Instructions

  1. Prepare the Bread: Flatten each slice of bread using a rolling pin to create an even surface ideal for rolling.
  2. Add Banana Slices: Place a few slices of banana along one edge of each flattened bread slice, then roll the bread tightly around the bananas.
  3. Mix Egg Batter: In a shallow bowl, whisk together the eggs, milk, vanilla extract, and cinnamon until well combined.
  4. Prepare Cinnamon Sugar: In a small bowl, stir together granulated sugar and a pinch of cinnamon for coating later.
  5. Cook the Roll-Ups: Heat butter in a skillet over medium heat. Dip each roll-up into the egg mixture, ensuring all sides are coated, then cook in the skillet. Turn often to brown all sides evenly, cooking for about 6 to 8 minutes until golden and cooked through.
