- 8 slices soft white bread, crusts removed
- 2 ripe bananas, sliced
Egg Mixture
- 2 large eggs
- 1/4 cup milk

- Pinch of extra ground cinnamon
- 2 tablespoons butter

Instructions
- Prepare the Bread: Flatten each slice of bread using a rolling pin to create an even surface ideal for rolling.
- Add Banana Slices: Place a few slices of banana along one edge of each flattened bread slice, then roll the bread tightly around the bananas.
- Mix Egg Batter: In a shallow bowl, whisk together the eggs, milk, vanilla extract, and cinnamon until well combined.
- Prepare Cinnamon Sugar: In a small bowl, stir together granulated sugar and a pinch of cinnamon for coating later.
- Cook the Roll-Ups: Heat butter in a skillet over medium heat. Dip each roll-up into the egg mixture, ensuring all sides are coated, then cook in the skillet. Turn often to brown all sides evenly, cooking for about 6 to 8 minutes until golden and cooked through.
