Description

These Banana Bread Bites are a delightful and healthier alternative to traditional banana bread. Packed with ripe bananas and wholesome ingredients, these mini bites are perfect for snacking or breakfast on the go.


Ingredients

Ingredients:

  • 1 cup mashed ripe bananas (about 23 bananas)
  • 1 large egg
  • 1/4 cup maple syrup
  • 1/4 cup melted coconut oil
  • 1/2 teaspoon vanilla extract
  • 1 cup oat flour
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon salt
  • 1/3 cup mini chocolate chips (optional)


Instructions

  1. Preheat the oven: Preheat the oven to 350°F (175°C) and lightly grease a mini muffin tin or line with mini paper liners.
  2. Prepare the batter: In a large bowl, combine the mashed bananas, egg, maple syrup, melted coconut oil, and vanilla extract. Whisk until smooth. Add oat flour, baking soda, cinnamon, and salt. Stir until just combined. Fold in mini chocolate chips if desired.
  3. Bake: Spoon the batter into the mini muffin tin, filling each cup about 3/4 full. Bake for 12–15 minutes until a toothpick inserted into the center comes out clean.
  4. Cool and serve: Allow the bites to cool in the tin for 5 minutes before transferring to a wire rack to cool completely.

Notes

  • You can substitute oat flour with almond flour for a grain-free version.
  • Add chopped walnuts for extra texture and flavor.
