Ingredients

For the Chicken:

  • 4 boneless skinless chicken breasts
  • 2 tablespoons olive oil
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

For the Tomatoes:

  • 2 cups cherry tomatoes, halved
  • 3 cloves garlic, minced
  • 1/4 cup balsamic vinegar
  • 2 tablespoons honey
  • 1/4 cup fresh basil, chopped
  • 1/4 cup grated Parmesan cheese (optional)


Instructions

  1. Season the Chicken: Season chicken breasts with Italian seasoning, garlic powder, salt, and black pepper.
  2. Sear the Chicken: Heat olive oil in a large skillet over medium-high heat. Sear chicken for 5–6 minutes per side until golden brown and cooked through. Remove and set aside.
  3. Cook the Tomatoes: In the same skillet, add cherry tomatoes and cook for 3 minutes until they begin to soften. Stir in garlic and cook for 1 minute.
  4. Make the Glaze: Add balsamic vinegar and honey, stirring to create a glaze.
  5. Finish the Dish: Return chicken to the skillet and spoon the sauce and tomatoes over the top. Simmer for 2–3 minutes to heat through. Sprinkle with fresh basil and Parmesan before serving.
