Ingredients
Dry Ingredients:
- 2 cups all-purpose flour
- ½ cup granulated sugar
- 1 tablespoon baking powder
- ½ teaspoon baking soda
- ½ teaspoon salt
- 1 teaspoon ground cinnamon
Wet Ingredients:
- 2 large eggs
- ¾ cup milk
- ⅓ cup plain yogurt
- ½ cup unsalted butter, melted and cooled
- 1 teaspoon vanilla extract
Nut Filling:
- ¾ cup finely chopped walnuts
- ¾ cup finely chopped pistachios
- ½ cup finely chopped pecans
- ¼ cup brown sugar
- 1 teaspoon ground cinnamon
- ½ cup honey
- 2 tablespoons water
- 1 tablespoon lemon juice
- 1 teaspoon orange blossom water (optional)
Honey Syrup:
Instructions
- Preheat oven and prepare muffin tin: Preheat oven to 375°F (190°C) and prepare a 12-cup muffin tin with liners or by greasing lightly.
- Mix dry and wet ingredients: In a large bowl, whisk together dry ingredients. In another bowl, whisk eggs, milk, yogurt, melted butter, and vanilla extract until smooth. Combine wet and dry ingredients until just mixed.
- Prepare nut filling: Mix walnuts, pistachios, pecans, brown sugar, and cinnamon in a small bowl.
- Assemble and bake: Fill muffin cups halfway with batter, add nut mixture, top with remaining batter, and sprinkle extra nut filling. Bake for 18–22 minutes.
- Make honey syrup: Simmer honey, water, lemon juice, and orange blossom water in a saucepan. Pour syrup over warm muffins.
Notes
- Best served slightly warm.
- Honey syrup can be made ahead and stored in the fridge.
- For a crunchier top, broil muffins for 1–2 minutes at the end of baking.
