- 1 1/2 pounds large shrimp (peeled, deveined, tails on, butterflied)
- 1 1/2 cups crushed buttery crackers (like Ritz)
- 4 tablespoons unsalted butter (melted)
- 2 tablespoons olive oil
- 1/4 cup finely chopped onion
- 2 cloves garlic (minced)
- 2 tablespoons chopped fresh parsley
- 1 teaspoon Old Bay seasoning
- 1 tablespoon lemon juice
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper

Instructions
- Preheat the oven: Preheat the oven to 375°F and lightly grease a 9×13-inch baking dish.
- Sauté onions and garlic: In a skillet, sauté the chopped onion in olive oil until soft. Add garlic and cook briefly. Remove from heat.
- Prepare stuffing: In a bowl, mix crushed crackers, melted butter, parsley, sautéed onion and garlic, Old Bay seasoning, lemon juice, salt, and pepper until moistened.
- Stuff the shrimp: Arrange butterflied shrimp in the baking dish, spoon stuffing over each shrimp, and press gently to adhere.
- Bake: Bake for 18–20 minutes until shrimp are pink, opaque, and stuffing is golden brown.
- Serve: Serve hot with lemon wedges.
