Description

This Baked Stuffed Shrimp Casserole is a delightful seafood dish that features butterflied shrimp topped with a flavorful breadcrumb mixture. Perfect for a special dinner or holiday gathering.

Ingredients

Ingredients:

  • 1 1/2 pounds large shrimp (peeled, deveined, butterflied)
  • 2 tablespoons olive oil
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 1/2 cups seasoned breadcrumbs
  • 1/4 cup grated Parmesan cheese
  • 1/4 cup chopped fresh parsley
  • 2 tablespoons fresh lemon juice
  • 1 teaspoon Old Bay seasoning
  • 4 tablespoons unsalted butter (melted)
  • 3 cloves garlic (minced)
  • 1/4 cup finely chopped onion
  • 1/4 cup dry white wine (optional)
  • 2 tablespoons chopped fresh parsley (for garnish)

Instructions

  1. Preheat the oven: Preheat the oven to 375°F (190°C) and grease a medium baking dish.
  2. Prepare shrimp: Arrange the butterflied shrimp in a single layer in the dish, drizzle with olive oil, sprinkle with salt and pepper.
  3. Make stuffing: In a mixing bowl, combine breadcrumbs, Parmesan cheese, parsley, lemon juice, Old Bay seasoning, melted butter, garlic, onion, and white wine (if using). Spoon mixture onto each shrimp.
  4. Bake: Bake uncovered for 18–20 minutes until shrimp are pink and topping is golden brown. Garnish with parsley before serving.

Notes

  • For extra richness, dot the top with additional butter before baking.
  • Serve with rice, pasta, or a green vegetable.
  • You can substitute Ritz crackers or panko for the breadcrumbs for a different texture.
