  • 1 (2–2.5 lb) steelhead trout fillet, skin on
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1 tablespoon lemon juice
  • 1 teaspoon lemon zest
  • 1 teaspoon dried dill or 1 tablespoon fresh dill, chopped
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • lemon slices and fresh herbs for garnish (optional)


Instructions

  1. Preheat the Oven: Preheat oven to 375°F (190°C). Line a baking sheet with parchment paper or lightly grease a baking dish.
  2. Prepare the Trout: Place the steelhead trout fillet skin-side down and pat dry with paper towels.
  3. Mix the Seasonings: In a small bowl, mix olive oil, garlic, lemon juice, lemon zest, dill, salt, and pepper. Brush or spoon the mixture evenly over the fish.
  4. Bake the Trout: Bake uncovered for 15–20 minutes, or until the fish flakes easily with a fork and reaches an internal temperature of 135–145°F.
  5. Rest and Garnish: Remove from the oven, rest for a few minutes, then garnish with lemon slices and herbs if desired. Serve hot.
