Ingredients
Potato Skins
- 4 medium russet potatoes
- 2 tablespoons olive oil
- 1/2 teaspoon salt
- 1/2 teaspoon black pepper
Toppings
- 1 cup shredded cheddar cheese
- 4 slices cooked bacon, crumbled
- 1/4 cup sour cream
- 2 green onions, sliced
Instructions
- Preheat and prepare potatoes: Preheat your oven to 400°F (200°C). Scrub the russet potatoes clean under running water, then pat them dry with a towel. Prick each potato a few times with a fork to allow steam to escape during baking.
- Bake potatoes: Place the potatoes directly on the oven rack and bake for 45 to 50 minutes, until tender when pierced with a fork.
- Cool and scoop: Remove the baked potatoes from the oven and let them cool slightly until safe to handle. Slice each potato in half lengthwise and carefully scoop out most of the flesh, leaving approximately a 1/4-inch layer of potato inside the skins to maintain structure.
- Brush and season skins: Brush both the inside and outside of the potato skins with olive oil, then sprinkle evenly with salt and pepper for seasoning.
- First crisp bake: Arrange the potato skins skin-side up on a baking sheet and bake for 10 minutes to start crisping the edges.
- Flip and crisp: Flip the potato skins over and bake for an additional 10 minutes to crisp the bottoms thoroughly.
- Add toppings and melt cheese: Spoon shredded cheddar cheese and crumbled bacon evenly into each potato skin. Return to the oven for 5 minutes until the cheese melts and becomes bubbly.
- Serve: Remove from the oven and serve the potato skins warm, topped with dollops of sour cream and slices of fresh green onions for garnish.

- For a healthier alternative, replace sour cream with Greek yogurt.
