Ingredients

For the Chicken:

  • 4 boneless, skinless chicken breasts
  • 1 teaspoon garlic powder
  • ½ teaspoon smoked paprika
  • Salt and pepper to taste

For the BBQ Sauce:

  • 1 cup barbecue sauce (your choice of flavor)
  • 1 cup pineapple chunks (drained if canned)
  • ¼ cup pineapple juice
  • 1 tablespoon soy sauce

For Garnish:

  • Chopped cilantro or green onions (optional)

Instructions

  1. Preheat and Season: Preheat the oven to 400°F (200°C). Season both sides of the chicken breasts with garlic powder, smoked paprika, salt, and pepper. Place them in a lightly greased baking dish.
  2. Mix BBQ Sauce: In a small bowl, whisk together the barbecue sauce, pineapple juice, and soy sauce. Pour the mixture over the chicken breasts. Add pineapple chunks around and on top of the chicken.
  3. Bake: Cover the dish with foil and bake for 25 minutes. Uncover, spoon sauce over the chicken, and bake for an additional 10–15 minutes until the chicken reaches 165°F (74°C).
  4. Rest and Serve: Let the chicken rest for 5 minutes. Garnish with cilantro or green onions. Serve with your choice of sides.
