Ingredients
For the Chicken:
- 4 boneless, skinless chicken breasts
- 1 teaspoon garlic powder
- ½ teaspoon smoked paprika
- Salt and pepper to taste
For the BBQ Sauce:
- 1 cup barbecue sauce (your choice of flavor)
- 1 cup pineapple chunks (drained if canned)
- ¼ cup pineapple juice
- 1 tablespoon soy sauce
For Garnish:
- Chopped cilantro or green onions (optional)
Instructions
- Preheat and Season: Preheat the oven to 400°F (200°C). Season both sides of the chicken breasts with garlic powder, smoked paprika, salt, and pepper. Place them in a lightly greased baking dish.
- Mix BBQ Sauce: In a small bowl, whisk together the barbecue sauce, pineapple juice, and soy sauce. Pour the mixture over the chicken breasts. Add pineapple chunks around and on top of the chicken.
- Bake: Cover the dish with foil and bake for 25 minutes. Uncover, spoon sauce over the chicken, and bake for an additional 10–15 minutes until the chicken reaches 165°F (74°C).
- Rest and Serve: Let the chicken rest for 5 minutes. Garnish with cilantro or green onions. Serve with your choice of sides.
