Description

Ingredients

Dry Ingredients:

  • 2 cups old-fashioned rolled oats
  • 1/3 cup brown sugar
  • 1 teaspoon baking powder
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon salt
  • 1/2 cup chopped walnuts or pecans (optional)

Wet Ingredients:

  • 1 cup milk
  • 1/2 cup unsweetened applesauce or mashed banana
  • 2 large eggs
  • 2 tablespoons melted butter or coconut oil
  • 1 teaspoon vanilla extract

Additional:

  • 1/2 cup fresh or frozen berries or chopped fruit (optional)

Instructions

  1. Preheat the oven: Preheat the oven to 350°F (175°C) and grease an 8×8-inch baking dish.
  2. Mix dry ingredients: In a large bowl, combine oats, brown sugar, baking powder, cinnamon, salt, and nuts.
  3. Prepare wet mixture: In another bowl, whisk together milk, applesauce or banana, eggs, melted butter or oil, and vanilla.
