Description

Ingredients

  • 4 boneless, skinless chicken breasts
  • 2 cups broccoli florets
  • 1 red bell pepper, sliced
  • 1 yellow bell pepper, sliced
  • 1 zucchini, sliced
  • 1 red onion, sliced
  • 3 tablespoons olive oil
  • 2 teaspoons Italian seasoning
  • 1 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 cup grated Parmesan cheese (optional)

Instructions

  1. Preheat oven to 400°F (200°C).
  2. Place chicken breasts on a large baking sheet lined with parchment paper or lightly greased.
  3. Arrange broccoli, bell peppers, zucchini, and red onion around the chicken.
  4. Drizzle olive oil over the chicken and vegetables.
  5. Sprinkle Italian seasoning, garlic powder, salt, and pepper evenly over everything.
  6. Toss the vegetables lightly to coat in oil and seasoning.
  7. Bake in the preheated oven for 25-30 minutes or until the chicken is cooked through and vegetables are tender.
  8. If using, sprinkle Parmesan cheese over the dish during the last 5 minutes of baking.
  9. Remove from oven and let rest for 5 minutes before serving.
