Description

A creamy and flavorful baked feta chicken pasta recipe that combines tender chicken, roasted cherry tomatoes, and creamy feta cheese to create a delicious one-dish meal perfect for weeknight dinners.

Ingredients

Chicken and Cheese

  • 2 chicken breasts, cut into bite-sized pieces
  • 8 oz feta cheese block

Pasta

  • 12 oz pasta (penne or fusilli)

Vegetables and Seasonings

  • 2 cups cherry tomatoes
  • 3 tablespoons olive oil
  • 3 cloves garlic, minced
  • 1 teaspoon dried oregano
  • Salt and black pepper to taste
  • Fresh basil leaves, for garnish

Instructions

  1. Preheat and prepare dish: Preheat the oven to 400°F (200°C). Place the block of feta cheese in the center of a baking dish and arrange the cherry tomatoes and bite-sized chicken pieces around it.
  2. Season ingredients: Drizzle olive oil evenly over the feta, tomatoes, and chicken. Sprinkle with minced garlic, dried oregano, salt, and black pepper. Gently toss everything together in the dish to coat the ingredients well.
  3. Bake the mixture: Place the baking dish in the preheated oven and bake for 30-35 minutes until the chicken is fully cooked and the cherry tomatoes are blistered and soft.
  4. Cook pasta: While the feta and chicken bake, cook the pasta according to the package instructions until al dente. Reserve half a cup of the pasta cooking water, then drain the pasta.
  5. Create the sauce: Remove the baking dish from the oven. Stir the baked feta, tomatoes, and chicken pieces together to form a creamy, cohesive sauce.
  6. Combine pasta and sauce: Add the cooked pasta to the baking dish and toss everything together. Gradually add the reserved pasta water as needed to reach the desired creamy consistency.
  7. Garnish and serve: Garnish the pasta with fresh basil leaves and serve warm immediately for the best flavor and texture.

Notes

  • You can substitute other pasta shapes such as farfalle or rotini based on preference.
  • For a spicier kick, add red pepper flakes with the oregano and garlic.
  • Leftovers can be stored in an airtight container in the refrigerator for up to 3 days.
  • Reheat gently in the microwave or on the stovetop with a splash of water to restore creaminess.
  • Using fresh oregano instead of dried will add a brighter herb flavor if available.
