Description

These Baked Cream Cheese Chicken Taquitos are a delicious and crispy Mexican-inspired appetizer or snack made with shredded chicken, creamy cheeses, and warm tortillas, baked to golden perfection. Perfectly seasoned and easy to prepare, they offer a healthier alternative to traditional fried taquitos without compromising on flavor and crunch.

Ingredients

Chicken Mixture

  • 2 cups cooked chicken, shredded
  • 4 oz cream cheese, softened
  • 1/2 cup shredded cheddar cheese
  • 1/2 cup shredded Monterey Jack cheese
  • 1/4 cup salsa or diced tomatoes with green chilies
  • 1 teaspoon garlic powder
  • 1/2 teaspoon cumin
  • Salt and black pepper, to taste

Other

  • 810 small flour or corn tortillas
  • Olive oil spray or brush, for baking

Instructions

  1. Preheat Oven: Preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper or lightly grease it to prevent sticking.
  2. Prepare Filling: In a large bowl, combine the shredded chicken, softened cream cheese, cheddar cheese, Monterey Jack cheese, salsa or diced tomatoes with green chilies, garlic powder, cumin, salt, and black pepper. Mix thoroughly until all ingredients are well blended.
  3. Warm Tortillas: Briefly warm the tortillas in the microwave for 10–15 seconds to make them flexible and easier to roll without cracking.
  4. Assemble Taquitos: Spoon 2 to 3 tablespoons of the chicken mixture onto each tortilla. Roll them up tightly, ensuring the filling is securely enclosed within the tortilla.
  5. Arrange for Baking: Place the rolled taquitos seam-side down on the prepared baking sheet to keep them from unrolling during baking. Lightly spray or brush each taquito with olive oil to help them crisp up in the oven.
  6. Bake: Bake in the preheated oven for 15 to 18 minutes, or until the taquitos are golden brown and crispy on the outside.
  7. Serve: Remove from the oven and serve warm. These taquitos pair well with sour cream, extra salsa, or guacamole as dipping options.

Notes

  • You can substitute corn tortillas for flour tortillas depending on your preference or dietary needs.
  • Ensure the cream cheese is softened to blend easily with the chicken mixture.
  • Warming the tortillas briefly prevents them from cracking when rolling.
  • For extra crispiness, turn the taquitos halfway through baking.
  • Leftover taquitos can be stored in the refrigerator and reheated in the oven to retain crispness.
