Description

These Baked Blueberry Fritter Bites are delightful mini muffins bursting with juicy blueberries and topped with a sweet glaze. Perfect for a quick breakfast or a tasty snack!


Ingredients

Main Fritter Ingredients:

  • 1 cup all-purpose flour
  • 1/4 cup granulated sugar
  • 1 teaspoon baking powder
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon salt
  • 1/3 cup milk
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 tablespoon melted butter
  • 1 cup fresh or frozen blueberries (if frozen, do not thaw)
  • Nonstick spray or oil for greasing

Glaze:

  • 1/2 cup powdered sugar
  • 1–2 tablespoons milk
  • 1/4 teaspoon vanilla extract


Instructions

  1. Preheat the oven: Preheat the oven to 350°F (175°C) and lightly grease a mini muffin pan.
  2. Mix dry ingredients: In a medium bowl, whisk together the flour, sugar, baking powder, cinnamon, and salt.
  3. Mix wet ingredients: In another bowl, whisk the milk, egg, vanilla, and melted butter until smooth.
  4. Combine and add blueberries: Pour the wet ingredients into the dry and stir until just combined. Gently fold in the blueberries.
  5. Bake: Spoon the batter into the mini muffin cups, bake for 12–15 minutes until golden and a toothpick comes out clean.
  6. Make glaze: While baking, whisk together glaze ingredients until smooth.
  7. Glaze: Let the bites cool for 5 minutes, then dip or drizzle with glaze. Let set before serving.

Notes

  • These bites are best the day they’re made but can be stored in an airtight container at room temperature for up to 2 days.
  • Add a pinch of lemon zest to the glaze for a bright citrus twist.
