These Baked Blueberry Fritter Bites are delightful mini muffins bursting with juicy blueberries and topped with a sweet glaze. Perfect for a quick breakfast or a tasty snack!
Ingredients
Main Fritter Ingredients:
- 1 cup all-purpose flour
- 1/4 cup granulated sugar
- 1 teaspoon baking powder
- 1/2 teaspoon ground cinnamon
- 1/4 teaspoon salt
- 1/3 cup milk
- 1 large egg
- 1 teaspoon vanilla extract
- 1 tablespoon melted butter
- 1 cup fresh or frozen blueberries (if frozen, do not thaw)
- Nonstick spray or oil for greasing
Glaze:
- 1/2 cup powdered sugar
- 1–2 tablespoons milk
- 1/4 teaspoon vanilla extract
Instructions
- Preheat the oven: Preheat the oven to 350°F (175°C) and lightly grease a mini muffin pan.
- Mix dry ingredients: In a medium bowl, whisk together the flour, sugar, baking powder, cinnamon, and salt.
- Mix wet ingredients: In another bowl, whisk the milk, egg, vanilla, and melted butter until smooth.
- Combine and add blueberries: Pour the wet ingredients into the dry and stir until just combined. Gently fold in the blueberries.
- Bake: Spoon the batter into the mini muffin cups, bake for 12–15 minutes until golden and a toothpick comes out clean.
- Make glaze: While baking, whisk together glaze ingredients until smooth.
- Glaze: Let the bites cool for 5 minutes, then dip or drizzle with glaze. Let set before serving.
Notes
- These bites are best the day they’re made but can be stored in an airtight container at room temperature for up to 2 days.
- Add a pinch of lemon zest to the glaze for a bright citrus twist.
