Egg Mixture
- 4 large eggs, divided

Instructions
- Preheat and Prepare Pan: Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper to prevent sticking.
- Roll Puff Pastry: Lightly dust a clean surface with flour and roll out the thawed puff pastry sheet to smooth any seams, ensuring an even thickness.
- Scramble Eggs: In a small bowl, beat 3 of the eggs with a pinch of salt and black pepper. Heat a nonstick skillet over medium heat and scramble the eggs until just set but still slightly soft. Remove from heat and let cool slightly.
- Assemble Filling: Spread the scrambled eggs evenly over the puff pastry sheet, leaving a 1/2-inch border around the edges. Evenly sprinkle the crumbled bacon, shredded cheddar, feta cheese, and chopped spinach over the eggs.
- Roll and Slice: Starting from one long side, tightly roll the puff pastry into a log shape. Slice the roll into 10 to 12 even pinwheels and place them cut-side up on the prepared baking sheet.
- Egg Wash and Bake: Beat the remaining egg with 1 tablespoon milk or cream and brush this egg wash over the tops of the pinwheels to create a golden finish when baked. Bake in the preheated oven for 18 to 22 minutes, or until the pinwheels are puffed and golden brown.
