These Bacon Guac Bombs are a delicious and easy-to-make appetizer featuring creamy guacamole mixed with cream cheese and wrapped in crispy crumbled bacon. Ingredients
Guacamole Mixture
- 2 avocados, pitted, peeled, and mashed
- 6 oz. cream cheese, softened
- Juice of 1 lime
- 1 garlic clove, minced
- 1/4 red onion, minced
- 1 small jalapeño, seeded and chopped (optional for less heat)
- 2 Tbsp. freshly chopped cilantro
- 1/2 tsp. cumin
- 1/2 tsp. chili powder
- Kosher salt, to taste
- Freshly ground black pepper, to taste
Bacon Coating
- 12 slices bacon, cooked and crumbled
Instructions
- Prepare the guacamole mixture: In a large bowl, combine mashed avocados, softened cream cheese, lime juice, minced garlic, minced red onion, chopped jalapeño, chopped cilantro, cumin, chili powder, kosher salt, and freshly ground black pepper. Stir the mixture until it is mostly smooth, leaving some small chunks for texture. Cover and refrigerate for about 30 minutes to allow flavors to meld and the mixture to firm up slightly.
- Form the guac bombs: Place the crumbled bacon on a large plate. Using a small cookie scoop or spoon, scoop portions of the chilled guacamole mixture and place them on the plate with the bacon. Roll each scoop in the bacon crumbs to coat thoroughly, then shape into bite-sized balls. Repeat until all the guacamole and bacon are used.
- Chill and serve: Store the bacon guac bombs in the refrigerator until ready to serve. They can be enjoyed cold or at room temperature as a flavorful appetizer or snack.
Notes
- You can adjust the heat level by removing the jalapeño seeds or omitting the pepper altogether.
- Make sure the cream cheese is softened for easy mixing.
