Description
A fresh and creamy Avocado Lover’s Dream Salad combining ripe avocados, mixed greens, crisp cucumber, tangy cherry tomatoes, and optional feta cheese, dressed with a simple lime and honey vinaigrette. Perfect for a quick, nutritious, and flavorful meal or side dish.
Ingredients
Salad Ingredients
- 2 ripe avocados, peeled, pitted, and sliced
- 4 cups mixed greens (arugula, spinach, or your choice)
- 1/2 cucumber, sliced
- 1/2 red onion, thinly sliced
- 1/2 cup cherry tomatoes, halved
- 1/4 cup feta cheese, crumbled (optional)
Dressing
- 1 tablespoon olive oil
- 1 tablespoon fresh lime juice
- 1 teaspoon honey (optional for sweetness)
- Salt and pepper, to taste
- Fresh cilantro, for garnish (optional)
Instructions
- Prepare the ingredients: Peel, pit, and slice the ripe avocados. Slice the cucumber and thinly slice the red onion. Halve the cherry tomatoes. Wash and dry the mixed greens thoroughly to ensure the salad isn’t watery.
- Make the dressing: In a small bowl, whisk together olive oil, fresh lime juice, honey (if using), salt, and pepper until emulsified and well combined to create a bright and tangy vinaigrette.
- Assemble the salad: In a large bowl, gently toss the mixed greens with cucumber, red onion, and cherry tomatoes. Carefully add the sliced avocado to avoid mashing.
- Add cheese and dressing: Sprinkle the crumbled feta cheese over the salad if using, then drizzle the prepared dressing evenly on top. Toss gently once more to coat all ingredients nicely without bruising the avocado.
- Garnish and serve: Garnish with fresh cilantro if desired for an added herbal note. Serve immediately to enjoy the creamy texture of the avocado and the crispness of the greens at their best.
Notes
- Use ripe but firm avocados to prevent mushiness.
- The honey in the dressing is optional; you can omit it for a more tart vinaigrette or substitute with maple syrup for a vegan option.
- Try substituting feta cheese with vegan cheese or omitting it for a dairy-free version.
- Adding nuts like toasted walnuts or seeds can add a pleasant crunch.
- To make this salad gluten-free, ensure all ingredients and dressings are free from gluten contamination.
