Description

Ingredients

Grits:

  • 4 cups water
  • 1 cup stone-ground grits
  • 1 teaspoon salt
  • 2 tablespoons unsalted butter, divided
  • 1 cup shredded sharp cheddar cheese

Shrimp:

  • 1 pound large shrimp, peeled and deveined
  • 1 teaspoon Cajun seasoning
  • 1/2 teaspoon smoked paprika
  • 1/2 teaspoon black pepper

Sauce:

  • 4 slices bacon, chopped
  • 1 small onion, finely diced
  • 1 red bell pepper, diced
  • 2 cloves garlic, minced
  • 1/2 cup chicken broth
  • 1/2 cup heavy cream
  • 2 green onions, sliced for garnish
  • Fresh parsley, chopped for garnish


Instructions

  1. Grits: Bring water and salt to a boil, then whisk in grits. Simmer, covered, for 20-25 minutes. Stir in 2 tablespoons butter and cheddar cheese.
  2. Shrimp: Season shrimp and cook in a skillet until pink. Remove shrimp.
  3. Sauce: Cook bacon until crispy. Add onion, bell pepper, garlic, then broth and cream. Simmer and stir in remaining butter. Return shrimp to the skillet and toss.
  4. Serve the creamy grits topped with shrimp mixture. Garnish with green onions and parsley.

Notes

  • For extra richness, use a mix of milk and water for the grits.
  • Adjust spice level by varying Cajun seasoning.
  • Quick-cooking grits can be substituted for stone-ground grits.
