Ingredients
For the chicken:
- 4 boneless, skinless chicken breasts
- 12 asparagus spears, trimmed
- 4 slices mozzarella or provolone cheese
- 2 tablespoons olive oil
- 1 teaspoon garlic powder
- 1 teaspoon paprika
- 1/2 teaspoon onion powder
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- toothpicks or kitchen twine
Instructions
- Preheat the oven: Preheat your oven to 400°F (200°C).
- Pound the chicken: Place each chicken breast between two sheets of plastic wrap and pound to an even thickness, about 1/2 inch.
- Season the chicken: Season both sides of the chicken with garlic powder, paprika, onion powder, salt, and pepper.
- Fill and roll: Lay a slice of cheese and 3 asparagus spears in the center of each chicken breast. Roll the chicken tightly around the filling and secure with toothpicks or kitchen twine.
- Sear and bake: Heat olive oil in a large oven-safe skillet over medium-high heat. Sear the chicken breasts for 2-3 minutes per side until golden. Transfer the skillet to the oven and bake for 18-20 minutes, or until the internal temperature reaches 165°F (74°C).
- Rest and serve: Let the chicken rest for 5 minutes before serving.
