Ingredients

For the chicken:

  • 4 boneless, skinless chicken breasts
  • 12 asparagus spears, trimmed
  • 4 slices mozzarella or provolone cheese
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • toothpicks or kitchen twine


Instructions

  1. Preheat the oven: Preheat your oven to 400°F (200°C).
  2. Pound the chicken: Place each chicken breast between two sheets of plastic wrap and pound to an even thickness, about 1/2 inch.
  3. Season the chicken: Season both sides of the chicken with garlic powder, paprika, onion powder, salt, and pepper.
  4. Fill and roll: Lay a slice of cheese and 3 asparagus spears in the center of each chicken breast. Roll the chicken tightly around the filling and secure with toothpicks or kitchen twine.
  5. Sear and bake: Heat olive oil in a large oven-safe skillet over medium-high heat. Sear the chicken breasts for 2-3 minutes per side until golden. Transfer the skillet to the oven and bake for 18-20 minutes, or until the internal temperature reaches 165°F (74°C).
  6. Rest and serve: Let the chicken rest for 5 minutes before serving.
