Description

This delicious Asparagus Ravioli with Sausage and Peas recipe combines tender fresh ravioli filled with asparagus with savory Italian sausage and sweet peas, all coated in a buttery garlic sauce and topped with Parmesan cheese and fresh parsley. Ready in just 30 minutes, it’s a perfect weeknight meal that feels both elegant and comforting.

Ingredients

Main Ingredients

  • 1 package of fresh asparagus ravioli (or homemade)
  • 1 lb Italian sausage (bulk or casing removed)
  • 1 cup frozen peas (or fresh, if preferred)
  • 3 tbsp unsalted butter
  • 2 cloves garlic, minced
  • 1/4 tsp red pepper flakes (optional)
  • 1/2 cup grated Parmesan cheese
  • Salt and pepper, to taste
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Cook the ravioli: Cook the asparagus ravioli according to the package instructions until tender. Once done, drain the ravioli, reserving 1/4 cup of the pasta cooking water, and set aside.
  2. Cook the sausage: While the ravioli cooks, heat a large skillet over medium heat. Add the Italian sausage, breaking it up as it cooks, and cook for about 5 to 7 minutes until browned and crumbled. Remove any excess fat from the skillet if necessary.
  3. Add garlic and seasoning: Add the minced garlic and red pepper flakes (if using) to the browned sausage. Cook for an additional 1 to 2 minutes until the garlic is fragrant.
  4. Cook the peas: Stir in the peas and cook for 2 more minutes, allowing them to warm through and combine their flavors with the sausage and garlic.
  5. Combine ravioli and sauce: Add the cooked ravioli back into the skillet with the sausage and peas. Add the unsalted butter and the reserved pasta water. Toss gently to coat the ravioli evenly with the buttery sauce. Season with salt and pepper to taste.
  6. Add cheese and garnish: Sprinkle the grated Parmesan cheese evenly over the top. Garnish with chopped fresh parsley to add a fresh finish.
  7. Serve: Serve the dish immediately while warm and enjoy the delightful blend of flavors.

Notes

  • You can substitute fresh peas for frozen peas if preferred for a fresher flavor.
  • Adjust the red pepper flakes to control the spice level or omit entirely for a milder dish.
  • Use bulk sausage for easy crumbling or remove casing from links before cooking.
  • Reserve some pasta water to help create a silky sauce that adheres to the ravioli.
  • For a vegetarian version, omit the sausage and add sautéed mushrooms or substitute with plant-based sausage.
