Description

These Apple Fritter Bites offer a delightful bite-sized twist on the classic apple fritter. Soft, cinnamon-spiced dough filled with sweet diced apples is baked to golden perfection and finished with a luscious apple cider glaze. Perfect as a snack or dessert, these mini treats deliver all the comforting flavors of fall in a convenient, easy-to-eat form.

Ingredients

For the Bites

  • Nonstick cooking spray (for greasing the muffin tin)
  • 1 1/2 cups all-purpose flour
  • 2 tsp baking powder
  • 1/2 tsp kosher salt
  • 2 tsp ground cinnamon
  • 1/4 cup unsalted butter, melted
  • 1/4 cup granulated sugar
  • 1 large egg
  • 1/2 tsp vanilla extract
  • 1/2 cup unsweetened applesauce
  • 1 1/2 cups finely diced Honeycrisp or Gala apples (about 2 medium apples)

For the Glaze

  • 2 cups powdered sugar
  • 1/3 cup + 2 tbsp apple cider or juice

Instructions

  1. Preheat and Prepare: Preheat your oven to 350°F (175°C) and lightly grease a mini muffin tin with nonstick cooking spray to prevent sticking.
  2. Mix Dry Ingredients: In a medium bowl, whisk together the all-purpose flour, baking powder, kosher salt, and ground cinnamon until evenly combined.
  3. Combine Wet Ingredients: In a separate bowl, whisk together the melted unsalted butter and granulated sugar. Add the egg, vanilla extract, and unsweetened applesauce, mixing until the batter is smooth and homogenous.
  4. Combine Wet and Dry: Gradually add the dry ingredients into the wet ingredients, stirring gently until just combined, taking care not to overmix. Finally, fold in the finely diced apples carefully to distribute them evenly.
  5. Fill Muffin Tin: Spoon the batter into the prepared mini muffin tin, filling each cup about three-quarters full to allow some rise without spilling.
  6. Bake: Bake in the preheated oven for 12-15 minutes or until a toothpick inserted into the center of a bite comes out clean, indicating they are cooked through.
  7. Prepare Glaze: While the bites cool slightly, whisk together the powdered sugar and apple cider or juice until the glaze is smooth and slightly thickened to coat the bites.
  8. Glaze and Cool: Dip each warm apple fritter bite into the glaze, allowing any excess to drip off. Place them on a cooling rack to let the glaze set properly.
  9. Serve: Enjoy these warm, bite-sized treats with a wonderful combination of sweet apple and warm cinnamon flavors!

Notes

  • Use Honeycrisp or Gala apples for best flavor and texture as they hold up well to baking.
  • Do not overmix the batter to keep the bites light and tender.
  • The glaze can be adjusted in thickness by adding more apple cider or powdered sugar as needed.
  • If preferred, you can substitute apple cider with apple juice in the glaze.
  • Store leftover bites in an airtight container at room temperature for up to 2 days for best freshness.
