Ingredients

- 1 cup finely diced and peeled apple (such as Honeycrisp or Granny Smith)
- 1/2 cup chopped pecans or walnuts (optional)
Instructions
- Preheat the oven: Preheat the oven to 350°F and line a baking sheet with parchment paper.
- Prepare dry ingredients: In a medium bowl, whisk together the flour, oats, baking soda, cinnamon, nutmeg, and salt.
- Cream butter and sugars: In a separate large bowl, cream the softened butter with the granulated sugar and brown sugar until light and fluffy.
- Add wet ingredients: Beat in the egg and vanilla extract until smooth.
- Combine wet and dry ingredients: Gradually add the dry ingredients to the wet ingredients and mix just until combined.
- Fold in apples and nuts: Fold in the diced apples and nuts if using.
- Bake: Drop rounded tablespoons of dough onto the prepared baking sheet, spacing them about 2 inches apart. Bake for 10–12 minutes or until the edges are golden and the centers are set.
- Cool: Let cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.
