Description

Ingredients

Dry Ingredients:

  • 1 1/4 cups all-purpose flour
  • 1 cup old-fashioned oats
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon nutmeg
  • 1/4 teaspoon salt

Wet Ingredients:

  • 1/2 cup unsalted butter (softened)
  • 1/2 cup granulated sugar
  • 1/2 cup brown sugar (packed)
  • 1 large egg
  • 1 teaspoon vanilla extract

Additional Ingredients:

  • 1 cup finely diced and peeled apple (such as Honeycrisp or Granny Smith)
  • 1/2 cup chopped pecans or walnuts (optional)

Instructions

  1. Preheat the oven: Preheat the oven to 350°F and line a baking sheet with parchment paper.
  2. Prepare dry ingredients: In a medium bowl, whisk together the flour, oats, baking soda, cinnamon, nutmeg, and salt.
  3. Cream butter and sugars: In a separate large bowl, cream the softened butter with the granulated sugar and brown sugar until light and fluffy.
  4. Add wet ingredients: Beat in the egg and vanilla extract until smooth.
  5. Combine wet and dry ingredients: Gradually add the dry ingredients to the wet ingredients and mix just until combined.
  6. Fold in apples and nuts: Fold in the diced apples and nuts if using.
  7. Bake: Drop rounded tablespoons of dough onto the prepared baking sheet, spacing them about 2 inches apart. Bake for 10–12 minutes or until the edges are golden and the centers are set.
  8. Cool: Let cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.
