Ingredients
Crust:
- 1 1/2 cups graham cracker crumbs
- 1/4 cup granulated sugar
- 1/2 cup unsalted butter, melted
Cheesecake Filling:
- 24 oz cream cheese, softened
- 1 cup granulated sugar
- 3 large eggs
- 1 teaspoon vanilla extract
- 1/2 cup sour cream
Apple Layer:
- 3 cups peeled and chopped apples (Honeycrisp or Granny Smith)
- 2 tablespoons brown sugar
- 1/2 teaspoon cinnamon
- 1/4 teaspoon nutmeg
Crisp Topping:
- 3/4 cup old-fashioned oats
- 1/2 cup all-purpose flour
- 1/3 cup brown sugar
- 1/2 teaspoon cinnamon
- 1/4 cup unsalted butter, melted
Instructions
- Preheat oven and prepare pan: Preheat oven to 325°F (163°C) and grease a 9-inch springform pan. Mix crust ingredients, press into pan.
- Prepare cheesecake filling: Beat cream cheese and sugar, add eggs one at a time, mix in vanilla and sour cream. Pour over crust.
- Add apple layer: Toss apples with sugar and spices, spread over cheesecake.
- Make crisp topping: Combine oats, flour, sugar, and cinnamon. Stir in melted butter. Sprinkle over apples.
- Bake and cool: Bake for 60–70 minutes, cool in oven for 1 hour, then chill in the refrigerator for at least 4 hours.
