Ingredients

Crust:

  • 1 1/2 cups graham cracker crumbs
  • 1/4 cup granulated sugar
  • 1/2 cup unsalted butter, melted

Cheesecake Filling:

  • 24 oz cream cheese, softened
  • 1 cup granulated sugar
  • 3 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 cup sour cream

Apple Layer:

  • 3 cups peeled and chopped apples (Honeycrisp or Granny Smith)
  • 2 tablespoons brown sugar
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon nutmeg

Crisp Topping:

  • 3/4 cup old-fashioned oats
  • 1/2 cup all-purpose flour
  • 1/3 cup brown sugar
  • 1/2 teaspoon cinnamon
  • 1/4 cup unsalted butter, melted

Instructions

  1. Preheat oven and prepare pan: Preheat oven to 325°F (163°C) and grease a 9-inch springform pan. Mix crust ingredients, press into pan.
  2. Prepare cheesecake filling: Beat cream cheese and sugar, add eggs one at a time, mix in vanilla and sour cream. Pour over crust.
  3. Add apple layer: Toss apples with sugar and spices, spread over cheesecake.
  4. Make crisp topping: Combine oats, flour, sugar, and cinnamon. Stir in melted butter. Sprinkle over apples.
  5. Bake and cool: Bake for 60–70 minutes, cool in oven for 1 hour, then chill in the refrigerator for at least 4 hours.
