Ingredients
Main Coleslaw:
- 4 cups shredded green cabbage
- 1 cup shredded red cabbage
- 1 large apple, julienned or chopped (Honeycrisp or Fuji work well)
- 1/2 cup dried cranberries
- 1/4 cup sliced green onions
- 1/2 cup shredded carrots
Dressing:
- 1/3 cup mayonnaise
- 1 tablespoon apple cider vinegar
- 1 tablespoon honey
- 1 teaspoon Dijon mustard
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
Instructions
- Main Coleslaw: In a large bowl, combine the green cabbage, red cabbage, apple, cranberries, green onions, and carrots.
- Dressing: In a separate small bowl, whisk together the mayonnaise, apple cider vinegar, honey, Dijon mustard, salt, and pepper until smooth.
- Pour the dressing over the slaw mixture and toss until everything is evenly coated.
- Refrigerate for at least 30 minutes before serving to allow the flavors to meld.
