Instructions
- Preheat the oven: Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
- Prepare dry ingredients: In a medium bowl, whisk together the oats, flour, baking soda, cinnamon, nutmeg, and salt.
- Cream butter and sugars: In a large bowl, beat the butter, brown sugar, and granulated sugar until light and fluffy.
- Add wet ingredients: Add the egg and vanilla extract to the butter mixture, mixing until combined.
- Combine dry and wet ingredients: Gradually stir in the dry ingredients until a soft dough forms.
- Add mix-ins: Fold in the chopped apple and raisins.
- Bake: Scoop rounded tablespoons of dough onto the prepared baking sheet and bake for 10–12 minutes until golden.
- Cool: Cool on the baking sheet for 5 minutes, then transfer to a wire rack to cool completely.
