Description

These Apple Cinnamon Muffins are a delightful treat perfect for breakfast or a snack. They are moist, flavorful, and filled with chunks of fresh apples and warm spices.


Ingredients

Dry Ingredients:

  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • ½ teaspoon baking soda
  • ½ teaspoon salt
  • 1 ½ teaspoons ground cinnamon
  • ½ teaspoon ground nutmeg

Wet Ingredients:

  • ½ cup unsalted butter (softened)
  • ½ cup granulated sugar
  • ½ cup packed brown sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • ½ cup milk

Additional:

  • 1 ½ cups peeled and finely chopped apples (about 2 medium apples)
  • Coarse sugar or cinnamon sugar for topping (optional)

Instructions

  1. Preheat Oven: Preheat the oven to 375°F (190°C) and prepare a 12-cup muffin tin with liners or grease.
  2. Mix Dry Ingredients: In a medium bowl, whisk together flour, baking powder, baking soda, salt, cinnamon, and nutmeg.
  3. Beat Butter and Sugars: In a large bowl, beat butter, granulated sugar, and brown sugar until light and fluffy. Add eggs one at a time, then mix in vanilla.
  4. Combine Wet and Dry: Gradually add dry ingredients to wet mixture, alternating with milk, mixing until just combined. Gently fold in chopped apples.
  5. Bake: Divide batter among muffin cups and bake for 18–22 minutes until a toothpick comes out clean. Cool in the tin for 5 minutes, then transfer to a wire rack to cool completely.
