Ingredients

For the Apple Filling:

  • 1 large apple (peeled, cored, and diced)
  • 1 tablespoon butter
  • 1 tablespoon maple syrup
  • 1/2 teaspoon cinnamon

For the Cheesecake Mixture:

  • 4 ounces cream cheese (softened)
  • 2 tablespoons Greek yogurt
  • 1 tablespoon honey
  • 1/2 teaspoon vanilla extract
  • pinch of salt

For Assembly:

  • 4 large flour tortillas
  • cooking spray or additional butter for the skillet

Instructions

  1. Prepare the Apple Filling: In a skillet over medium heat, melt the butter and add the diced apple, maple syrup, and cinnamon. Cook for 5–6 minutes until the apples are soft and caramelized. Set aside to cool slightly.

  3. Assemble the Quesadillas: Lay out the tortillas and spread the cheesecake mixture over half of each one. Spoon the apple mixture evenly on top of the cream cheese layer, then fold each tortilla in half to form a semicircle.
  4. Cook the Quesadillas: Heat a clean skillet over medium heat and lightly grease it with cooking spray or butter. Cook each quesadilla for 2–3 minutes per side until golden brown and crisp.
