- 1 tablespoon honey
- 1/2 teaspoon vanilla extract
- pinch of salt
For Assembly:
- 4 large flour tortillas
- cooking spray or additional butter for the skillet
Instructions
- Prepare the Apple Filling: In a skillet over medium heat, melt the butter and add the diced apple, maple syrup, and cinnamon. Cook for 5–6 minutes until the apples are soft and caramelized. Set aside to cool slightly.
- Make the Cheesecake Mixture: In a bowl, mix the softened cream cheese, Greek yogurt, honey, vanilla, and salt until smooth.
- Assemble the Quesadillas: Lay out the tortillas and spread the cheesecake mixture over half of each one. Spoon the apple mixture evenly on top of the cream cheese layer, then fold each tortilla in half to form a semicircle.

- Serve: Let cool slightly, then cut into wedges and serve warm.
Notes
- These quesadillas can be prepped ahead and reheated in a toaster oven or skillet.
- Try using whole wheat tortillas for extra fiber or add a sprinkle of chopped pecans for crunch.
