Description

These Apple Cheesecake Breakfast Quesadillas combine creamy sweetened cream cheese with warm, spiced apples sandwiched between golden, crispy flour tortillas. Perfect for a quick and indulgent morning treat, they offer a delightful mix of flavors and textures with a hint of cinnamon and nutmeg, finished with a dusting of powdered sugar and a drizzle of maple syrup.

Ingredients

Tortillas and Base

  • 4 large flour tortillas

Cream Cheese Filling

  • 8 oz cream cheese, softened
  • 1/4 cup granulated sugar
  • 1 teaspoon vanilla extract

Apple Filling

  • 2 large apples, peeled, cored, and thinly sliced
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg

For Cooking and Garnish

  • 1 tablespoon butter
  • Powdered sugar, for garnish
  • Maple syrup, for serving

Instructions

  1. Prepare the Filling: In a medium bowl, beat the softened cream cheese, granulated sugar, and vanilla extract together until the mixture is smooth and creamy, ensuring no lumps remain.
  2. Spice the Apples: Place the peeled, cored, and thinly sliced apples in a bowl and toss them thoroughly with the ground cinnamon and ground nutmeg, making sure each slice is well coated with the spices.
  3. Assemble the Quesadillas: Spread an even layer of the cream cheese mixture on one side of each flour tortilla. Take two of the tortillas and arrange the spiced apple slices over the cream cheese layer.
  4. Complete the Quesadillas: Place the remaining two tortillas on top of the apple-covered tortillas, cream cheese side down, creating two filled quesadillas.
  5. Cook the Quesadillas: Heat a skillet over medium heat and melt the butter. Carefully place one quesadilla in the skillet and cook for 2 to 3 minutes on each side, or until the tortillas are golden brown and the filling is warmed through.
  6. Repeat Cooking: Remove the cooked quesadilla from the skillet and repeat the cooking process with the second quesadilla.
  7. Serve: Slice the quesadillas into wedges, dust with powdered sugar, and drizzle with maple syrup as desired. Serve immediately while warm for the best flavor and texture experience.

Notes

  • Use firm apples like Granny Smith or Honeycrisp for the best texture and flavor contrast.
  • Make sure the cream cheese is softened to achieve a smooth filling without lumps.
  • Adjust the sweetness by adding more or less sugar to the cream cheese filling, according to your taste.
  • Butter can be substituted with oil or non-dairy butter for a different flavor or dietary preference.
  • Serve with a side of fresh fruit or yogurt for a more balanced breakfast.
