Description

This Apple, Carrot, and Oat Breakfast Bake is a wholesome, hearty dish perfect for a nutritious start to your day. Combining the natural sweetness of apples and carrots with the wholesome texture of oats, this bake is flavored with warming spices like cinnamon and nutmeg. It’s easy to prepare, baked to a golden brown, and can be customized with raisins, nuts, and seeds to add texture and nutrition. Ideal for a family breakfast or meal prep, it serves 6-8 and offers a comforting, healthful way to enjoy a balanced morning meal.

Ingredients

Main Ingredients

  • 2 medium apples, peeled and diced
  • 1 medium carrot, grated
  • 2 cups rolled oats
  • 1 ½ cups milk (dairy or non-dairy)
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 teaspoon cinnamon
  • ¼ teaspoon ground nutmeg
  • ¼ teaspoon salt
  • 2 tablespoons maple syrup or honey (optional, for sweetness)
  • 1 teaspoon baking powder

Optional Add-ins

  • ½ cup raisins or dried cranberries
  • ¼ cup chopped walnuts or almonds
  • 1 tablespoon chia seeds or flax seeds

Instructions

  1. Preheat the oven: Preheat your oven to 375°F (190°C). Grease a 9×9-inch baking dish or line it with parchment paper to prevent sticking.
  2. Prepare the dry ingredients: In a large mixing bowl, combine the peeled and diced apples, grated carrot, rolled oats, cinnamon, ground nutmeg, salt, and baking powder. Stir these ingredients until evenly mixed.
  3. Mix the wet ingredients: In a separate bowl, whisk together the milk, eggs, vanilla extract, and maple syrup or honey if using. Ensure the mixture is smooth and well-blended.
  4. Combine wet and dry mixtures: Pour the wet mixture into the dry ingredients bowl and gently stir to combine everything thoroughly. Fold in optional raisins, dried cranberries, nuts, or seeds at this stage to distribute them evenly throughout the batter.
  5. Bake the mixture: Transfer the batter into the prepared baking dish and spread it out evenly. Place it in the preheated oven and bake for 30 to 35 minutes. The bake is done when the top turns golden brown and a toothpick inserted into the center comes out clean.
  6. Cool and serve: Remove the baking dish from the oven and allow the bake to cool for 5-10 minutes. Once cooled slightly, cut into squares and serve warm. Optionally, top with a dollop of yogurt or an extra drizzle of maple syrup for added flavor.

Notes

  • You can substitute rolled oats with steel-cut oats but adjust the liquid slightly for texture.
  • For a vegan version, replace eggs with flax eggs and use plant-based milk.
  • Adding nuts or seeds boosts the healthy fat and protein content.
  • Store leftovers covered in the refrigerator for up to 4 days and reheat before serving.
  • This bake is suitable for make-ahead meal prep and freezes well for up to 2 months.
