Ingredients
- 2 medium apples, peeled, cored, and chopped
- 1 3/4 cups all-purpose flour
- 1/2 cup granulated sugar

- 2 large eggs
- 1/2 cup unsalted butter, softened

- 1/2 teaspoon baking soda

Instructions
- Preheat your oven to 350°F (175°C) and grease a 9×5-inch loaf pan. Optionally, line with parchment paper.
- In a large bowl, whisk together flour, baking powder, baking soda, cinnamon, and salt.
- In another bowl, cream the softened butter with granulated and brown sugar until fluffy. Beat in the eggs one at a time, then stir in vanilla extract and milk until fully combined.
- Gradually mix dry ingredients into the wet mixture until just combined. Gently fold in chopped apples.
- Pour batter into the prepared pan, smoothing the top. Optionally, sprinkle with cinnamon sugar or extra brown sugar.
