Ingredients
Oat Crust:
- 1 1/2 cups old-fashioned oats
- 1 1/4 cups all-purpose flour
- 1 cup brown sugar, packed
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 3/4 cup unsalted butter, melted
Rhubarb Filling:
- 2 cups chopped fresh rhubarb
- 1/2 cup granulated sugar
- 1 tablespoon cornstarch
- 1/2 teaspoon cinnamon
- 1/4 cup water
- 1 teaspoon vanilla extract
Instructions
- Preheat the oven: Preheat the oven to 350°F (175°C) and prepare a 9×9-inch baking dish.
- Make the oat crust: Combine oats, flour, brown sugar, baking soda, salt, and melted butter. Press two-thirds of the mixture into the pan.
- Prepare the rhubarb filling: Cook rhubarb, sugar, cornstarch, cinnamon, and water until thickened. Stir in vanilla.
- Assemble and bake: Spread rhubarb filling over the crust, sprinkle the remaining oat mixture on top, and bake for 30–35 minutes.
- Cool and serve: Let the bars cool completely before cutting into squares.

- Store bars in the refrigerator for up to 5 days.
