Description

These Amish Oatmeal Rhubarb Bars are a delightful treat that balances the sweet and tart flavors of rhubarb with a hearty oat crust. Perfect for a springtime dessert or snack.


Ingredients

Oat Crust:

  • 1 1/2 cups old-fashioned oats
  • 1 1/4 cups all-purpose flour
  • 1 cup brown sugar, packed
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 3/4 cup unsalted butter, melted

Rhubarb Filling:

  • 2 cups chopped fresh rhubarb
  • 1/2 cup granulated sugar
  • 1 tablespoon cornstarch
  • 1/2 teaspoon cinnamon
  • 1/4 cup water
  • 1 teaspoon vanilla extract


Instructions

  1. Preheat the oven: Preheat the oven to 350°F (175°C) and prepare a 9×9-inch baking dish.
  2. Make the oat crust: Combine oats, flour, brown sugar, baking soda, salt, and melted butter. Press two-thirds of the mixture into the pan.
  3. Prepare the rhubarb filling: Cook rhubarb, sugar, cornstarch, cinnamon, and water until thickened. Stir in vanilla.
  4. Assemble and bake: Spread rhubarb filling over the crust, sprinkle the remaining oat mixture on top, and bake for 30–35 minutes.
  5. Cool and serve: Let the bars cool completely before cutting into squares.
