Description

Amish Harvest Casserole is a hearty and comforting dish that combines ground beef, vegetables, pasta, and a flavorful tomato sauce, topped with melted cheddar cheese and a crunchy breadcrumb topping. It’s a satisfying one-dish meal perfect for a family dinner.

Ingredients

Ingredients:

  • 1 pound ground beef
  • 1 small onion, chopped
  • 2 cloves garlic, minced
  • 1 cup uncooked elbow macaroni or small pasta shells
  • 1 can (15 ounces) corn, drained
  • 1 can (15 ounces) green beans, drained
  • 1 can (14.5 ounces) diced tomatoes, undrained
  • 1 can (10.5 ounces) condensed tomato soup
  • 1 teaspoon dried basil
  • ½ teaspoon dried thyme
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • 1 cup shredded cheddar cheese
  • ½ cup crushed buttery crackers or breadcrumbs (optional, for topping)

Instructions

  1. Preheat the oven: Preheat the oven to 350°F (175°C) and lightly grease a 9×13-inch casserole dish.
  2. Cook beef and onion: In a skillet, cook the ground beef and onion until beef is browned. Add garlic, cook briefly, and drain excess fat.
  3. Cook pasta: Cook pasta until al dente, then drain.
  4. Mix ingredients: Combine pasta, beef mixture, corn, green beans, tomatoes, soup, herbs, salt, and pepper in a bowl.
  5. Assemble: Pour mixture into baking dish. Top with cheddar cheese and optional crackers or breadcrumbs.
  6. Bake: Bake for 25–30 minutes until bubbly. Let cool before serving.

Notes

  • This casserole can be prepared ahead of time and is versatile for ingredient substitutions.
  • For a vegetarian version, omit the ground beef or use a meat alternative.
