Description

This Amazing Green Rice recipe is a flavorful and vibrant side dish that pairs perfectly with a variety of main courses. Made with fresh herbs and spices, this green rice is not only delicious but also visually appealing.


Ingredients

Main Ingredients:

  • 1 cup long-grain white rice
  • 1 ¾ cups vegetable broth or water

Green Mixture:

  • 1 cup fresh cilantro leaves
  • ½ cup fresh parsley or spinach
  • 1 small jalapeño (seeded for less heat)
  • 2 cloves garlic
  • 2 tablespoons chopped green onion
  • 2 tablespoons lime juice
  • 1 tablespoon olive oil
  • ½ teaspoon salt
  • ¼ teaspoon ground cumin


Instructions

  1. Rinse the Rice: Rinse the rice under cold water until the water runs clear.
  2. Blend Green Mixture: In a blender, combine cilantro, parsley/spinach, jalapeño, garlic, green onion, lime juice, olive oil, salt, cumin, and ½ cup of broth. Blend until smooth.
  3. Cook Rice: In a saucepan, combine green mixture with remaining broth, bring to a boil. Stir in rice, cover, and simmer for 18–20 minutes until tender.
  4. Rest and Serve: Remove from heat, let stand covered for 5 minutes. Fluff with a fork and serve warm.
