Ingredients
Main Ingredients:
- 1 cup long-grain white rice
- 1 ¾ cups vegetable broth or water
Green Mixture:
- 1 cup fresh cilantro leaves
- ½ cup fresh parsley or spinach
- 1 small jalapeño (seeded for less heat)
- 2 cloves garlic
- 2 tablespoons chopped green onion
- 2 tablespoons lime juice
- 1 tablespoon olive oil
- ½ teaspoon salt
- ¼ teaspoon ground cumin
Instructions
- Rinse the Rice: Rinse the rice under cold water until the water runs clear.
- Blend Green Mixture: In a blender, combine cilantro, parsley/spinach, jalapeño, garlic, green onion, lime juice, olive oil, salt, cumin, and ½ cup of broth. Blend until smooth.
- Cook Rice: In a saucepan, combine green mixture with remaining broth, bring to a boil. Stir in rice, cover, and simmer for 18–20 minutes until tender.
- Rest and Serve: Remove from heat, let stand covered for 5 minutes. Fluff with a fork and serve warm.
