Description

These Almond Meltaway Cookies are a delightful treat with a tender, shortbread-like texture and a sweet almond glaze. Perfect for holiday gatherings or a cozy tea party.

Ingredients

Cookies:

  • 1 cup unsalted butter (softened)
  • 3/4 cup powdered sugar
  • 1/2 teaspoon almond extract
  • 1 1/2 cups all-purpose flour
  • 1/4 cup cornstarch
  • 1/4 teaspoon salt
  • 1/2 cup sliced almonds (optional for garnish)

Glaze:

  • 1 cup powdered sugar
  • 1 tablespoon milk
  • 1/4 teaspoon almond extract

Instructions

  1. Preheat the oven: Preheat to 375°F (190°C) and line a baking sheet with parchment paper.
  2. Cream butter and sugar: In a large bowl, cream butter and powdered sugar until light and fluffy. Mix in almond extract.
  3. Combine dry ingredients: In a separate bowl, whisk flour, cornstarch, and salt. Gradually add to the wet mixture and mix until a soft dough forms.
  4. Shape and bake: Roll dough into balls, flatten, and bake for 8–10 minutes until slightly golden.
  5. Make glaze: Whisk powdered sugar, milk, and almond extract. Drizzle over cooled cookies.
  6. Finish: Top with sliced almonds if desired and let the glaze set before serving.
