Instructions
- Preheat Oven: Preheat your oven to 375°F (190°C) to prepare for baking the apples evenly.
- Core Apples: Carefully core the apples, making sure to leave the bottom intact to hold the filling without it leaking out during baking.
- Prepare Filling: In a small bowl, combine the almond butter, chopped walnuts, maple syrup, cinnamon, nutmeg, and salt. Mix thoroughly until well blended.
- Fill Apples: Spoon the almond butter mixture into the hollow center of each apple, pressing gently to pack the mixture inside.
- Arrange Apples: Place the filled apples upright in a baking dish. Pour the water into the bottom of the dish to help keep the apples moist while baking.
- Bake Covered: Cover the baking dish with aluminum foil and bake for 25 minutes to let the apples cook through without drying out.
- Bake Uncovered: Remove the foil and continue baking for an additional 10 to 15 minutes, or until the apples become soft and slightly caramelized on top.
- Serve: Serve the baked apples warm, optionally topped with plain Greek yogurt or coconut yogurt and an extra drizzle of maple syrup for added flavor and creaminess.
