Ingredients
Zucchini Fries:
- 2 medium zucchinis, cut into fry-sized sticks
- ½ cup all-purpose flour
- 2 large eggs, beaten
Breadcrumb Mixture:
- 1 cup panko breadcrumbs
- ½ cup grated Parmesan cheese
- 1 teaspoon garlic powder
- 1 teaspoon Italian seasoning
- ½ teaspoon salt
- ¼ teaspoon black pepper
Additional:
- olive oil spray
Instructions
- Preheat the Air Fryer: Preheat the air fryer to 400°F (200°C).
- Prepare Breading Station: Set up a breading station with three shallow bowls: one with flour, one with beaten eggs, and one with a mixture of panko breadcrumbs, Parmesan cheese, garlic powder, Italian seasoning, salt, and pepper.
- Coat Zucchini: Dredge each zucchini stick in flour, then dip into the egg, and coat in the breadcrumb mixture, pressing lightly to adhere.
- Air Fry: Place the coated zucchini fries in a single layer in the air fryer basket. Lightly spray with olive oil. Air fry for 8–10 minutes, flipping halfway through, until golden and crispy.
- Serve: Serve immediately with your favorite dipping sauce.

- For a gluten-free version, use gluten-free flour and breadcrumbs.
