Description

Ingredients

Zucchini Fries:

  • 2 medium zucchinis, cut into fry-sized sticks
  • ½ cup all-purpose flour
  • 2 large eggs, beaten

Breadcrumb Mixture:

  • 1 cup panko breadcrumbs
  • ½ cup grated Parmesan cheese
  • 1 teaspoon garlic powder
  • 1 teaspoon Italian seasoning
  • ½ teaspoon salt
  • ¼ teaspoon black pepper

Additional:

  • olive oil spray

Instructions

  1. Preheat the Air Fryer: Preheat the air fryer to 400°F (200°C).
  2. Prepare Breading Station: Set up a breading station with three shallow bowls: one with flour, one with beaten eggs, and one with a mixture of panko breadcrumbs, Parmesan cheese, garlic powder, Italian seasoning, salt, and pepper.
  3. Coat Zucchini: Dredge each zucchini stick in flour, then dip into the egg, and coat in the breadcrumb mixture, pressing lightly to adhere.
  4. Air Fry: Place the coated zucchini fries in a single layer in the air fryer basket. Lightly spray with olive oil. Air fry for 8–10 minutes, flipping halfway through, until golden and crispy.
