Description

A vibrant and healthy mix of zucchini, bell pepper, mushrooms, onion, carrot, broccoli, and cauliflower air fried to tender perfection with Italian seasoning and garlic powder, finished with a fresh squeeze of lemon and optional Parmesan or parsley garnish.

Ingredients

Vegetables

  • 1 zucchini or yellow squash, cut into ½-inch half-moons
  • 1 red bell pepper, chopped into 1-inch pieces
  • 4 ounces cremini mushrooms, quartered
  • 1 small red onion, chopped into 1-inch pieces
  • 1 carrot, thinly sliced
  • 1 heaping cup small broccoli florets
  • 1 heaping cup small cauliflower florets

Seasonings and Extras

  • 3 tablespoons extra-virgin olive oil
  • 1 teaspoon Italian seasoning
  • ½ teaspoon garlic powder
  • ½ teaspoon sea salt
  • Freshly ground black pepper, to taste
  • Lemon wedge, for squeezing
  • Optional toppings: grated Parmesan cheese, fresh parsley

Instructions

  1. Preheat the air fryer: Set your air fryer to 375°F (190°C) and let it preheat for a few minutes to ensure even cooking.
  2. Prepare the vegetables: Wash and chop the zucchini, bell pepper, mushrooms, onion, carrot, broccoli, and cauliflower as directed for uniform sizes to promote even cooking.
  3. Season the veggies: In a large bowl, toss all the chopped vegetables with extra-virgin olive oil, Italian seasoning, garlic powder, sea salt, and freshly ground black pepper until everything is well coated.
  4. Cook in batches: Arrange the seasoned vegetables in a single layer inside the air fryer basket. Avoid overcrowding to allow hot air to circulate and crisp the veggies evenly.
  5. Air fry the vegetables: Cook the vegetables for 10-15 minutes, shaking the basket halfway through to ensure even browning and tenderness.
  6. Serve: Transfer the cooked vegetables to a serving dish, squeeze fresh lemon juice over the top to brighten flavors, and garnish with grated Parmesan cheese or fresh parsley if desired.

Notes

  • Make sure not to overcrowd the air fryer basket to allow proper air circulation and even cooking.
  • Vegetables can be cut into uniform sizes to ensure they cook evenly.
  • Shake the basket halfway through cooking to promote even crisping and prevent burning.
  • Feel free to add your favorite herbs or spices for variation.
  • For a vegan option, omit the Parmesan cheese or use a plant-based alternative.
