Ingredients
Vegetables
- 1 zucchini or yellow squash, cut into ½-inch half-moons
- 1 red bell pepper, chopped into 1-inch pieces
- 4 ounces cremini mushrooms, quartered
- 1 small red onion, chopped into 1-inch pieces
- 1 carrot, thinly sliced
- 1 heaping cup small broccoli florets
- 1 heaping cup small cauliflower florets
Seasonings and Extras
- 3 tablespoons extra-virgin olive oil
- 1 teaspoon Italian seasoning
- ½ teaspoon garlic powder
- ½ teaspoon sea salt
- Freshly ground black pepper, to taste
- Lemon wedge, for squeezing
- Optional toppings: grated Parmesan cheese, fresh parsley
Instructions
- Preheat the air fryer: Set your air fryer to 375°F (190°C) and let it preheat for a few minutes to ensure even cooking.
- Prepare the vegetables: Wash and chop the zucchini, bell pepper, mushrooms, onion, carrot, broccoli, and cauliflower as directed for uniform sizes to promote even cooking.
- Season the veggies: In a large bowl, toss all the chopped vegetables with extra-virgin olive oil, Italian seasoning, garlic powder, sea salt, and freshly ground black pepper until everything is well coated.
- Cook in batches: Arrange the seasoned vegetables in a single layer inside the air fryer basket. Avoid overcrowding to allow hot air to circulate and crisp the veggies evenly.
- Air fry the vegetables: Cook the vegetables for 10-15 minutes, shaking the basket halfway through to ensure even browning and tenderness.
- Serve: Transfer the cooked vegetables to a serving dish, squeeze fresh lemon juice over the top to brighten flavors, and garnish with grated Parmesan cheese or fresh parsley if desired.
Notes
- Make sure not to overcrowd the air fryer basket to allow proper air circulation and even cooking.
- Vegetables can be cut into uniform sizes to ensure they cook evenly.
- Shake the basket halfway through cooking to promote even crisping and prevent burning.
- Feel free to add your favorite herbs or spices for variation.
