Description

This Air Fryer Egg Bites recipe delivers a quick, protein-packed breakfast or snack option with a flavorful combination of spinach, cheddar cheese, bacon, and shallots. Using Greek yogurt in the egg mixture makes the bites extra creamy, while cooking them in the air fryer ensures a perfectly cooked, lightly browned top in just minutes.

Ingredients

Egg Mixture

  • 5 large eggs
  • 2 1/2 tablespoons Greek yogurt
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper

Fillings

  • 1/4 cup baby spinach, chopped
  • 1/4 cup cheddar cheese, shredded
  • 1/4 cup bacon, chopped
  • 1 small shallot, chopped

Instructions

  1. Preheat the Air Fryer: Preheat your air fryer to 190°C (375°F). This step ensures the air fryer is hot and ready for even cooking of the egg bites.
  2. Prepare the Egg Mixture: In a mixing bowl, whisk together the eggs, Greek yogurt, salt, and pepper until smooth and well combined. This mixture will provide a creamy, flavorful base for the egg bites.
  3. Assemble the Egg Bites: Divide the chopped spinach, shredded cheddar cheese, chopped bacon, and chopped shallot equally among six silicone molds. Place the molds in the air fryer basket, then carefully pour the egg mixture evenly over the fillings in each mold.
  4. Cook the Egg Bites: Air fry the assembled egg bites for 8 minutes, or until they have risen slightly and the tops are lightly browned. Be careful not to overcook to maintain a tender texture.

Notes

  • Use silicone molds to prevent sticking and allow for easy removal.
  • Customize the fillings with your favorite ingredients like bell peppers, mushrooms, or ham.
  • Check doneness by inserting a toothpick; it should come out clean.
  • Serve immediately for the best texture, or store in an airtight container and reheat gently.
  • If you don’t have an air fryer, you can bake these in a conventional oven at 375°F for about 15-18 minutes.
