Description

This Air Fryer Egg Bites recipe is a quick, protein-packed breakfast or snack option made with eggs, Greek yogurt, spinach, cheddar cheese, bacon, and shallots. Cooked in an air fryer, these egg bites are fluffy, flavorful, and perfect for busy mornings or meal prep.

Ingredients

Egg Mixture

  • 5 large eggs
  • 2 1/2 tablespoons Greek yogurt
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper

Fillings

  • 1/4 cup baby spinach, chopped
  • 1/4 cup cheddar cheese, shredded
  • 1/4 cup bacon, chopped
  • 1 small shallot, chopped

Instructions

  1. Preheat the air fryer: Preheat your air fryer to 190°C (375°F) to ensure the egg bites cook evenly and come out perfectly fluffy.
  2. Prepare the egg mixture: In a mixing bowl, whisk together the eggs, Greek yogurt, salt, and pepper until the mixture is smooth and well combined. This creamy base will give your egg bites a tender texture.
  3. Fill the molds: Evenly divide the chopped spinach, shredded cheddar cheese, chopped bacon, and shallots into six silicone molds. Then place the molds in the air fryer basket carefully.
  4. Pour the egg mixture: Slowly pour the egg mixture over the fillings in each silicone mold, making sure it evenly covers all ingredients without overflowing.
  5. Cook the egg bites: Air fry the egg bites for 8 minutes at 190°C (375°F), or until they rise and develop a light golden brown top. Avoid overcooking to keep them moist and tender.

Notes

  • Use silicone molds or small ramekins that fit in your air fryer basket to ensure even cooking.
  • Feel free to swap out fillings like spinach and bacon for other vegetables or meats to customize your egg bites.
  • Let the egg bites cool slightly before removing from molds to maintain their shape.
  • Store leftovers in an airtight container in the refrigerator for up to 3 days and reheat gently in the air fryer or microwave.
