Ingredients
Chicken and Vegetables
- 1 lb boneless, skinless chicken breasts, sliced into thin strips
- 1 red bell pepper, sliced
- 1 yellow bell pepper, sliced
- 1 green bell pepper, sliced
- 1 medium red onion, sliced
Seasoning and Extras
- 1 tbsp olive oil
- 1 tsp chili powder
- 1 tsp cumin
- ½ tsp smoked paprika
- ½ tsp garlic powder
- ½ tsp onion powder
- ½ tsp salt
- ¼ tsp black pepper
- ¼ tsp cayenne pepper (optional, for heat)
- Juice of 1 lime
To Serve
- 8 small flour or corn tortillas
- Fresh cilantro, for garnish
- Sliced avocado, sour cream, or salsa for serving (optional)
Instructions
- Preheat the air fryer: Set your air fryer to 375°F (190°C) to prepare it for cooking the chicken and vegetables evenly.
- Season the chicken and vegetables: In a large bowl, combine the sliced chicken breasts, red, yellow, and green bell peppers, and red onion. Drizzle with olive oil and sprinkle the chili powder, cumin, smoked paprika, garlic powder, onion powder, salt, black pepper, and optional cayenne pepper. Toss everything well to coat all pieces with the seasoning.
- Arrange in the air fryer basket: Spread the seasoned chicken and vegetable mixture evenly in the air fryer basket to ensure uniform cooking and proper air circulation.
- Air fry the mixture: Cook for 12-15 minutes, shaking the basket halfway through to turn the ingredients. Continue until the chicken is fully cooked through and the vegetables have a slight char.
- Add lime juice: After cooking, squeeze fresh lime juice over the chicken and vegetables and toss gently to combine and brighten the flavors.
- Warm the tortillas: Place the tortillas in the air fryer and heat them for 1-2 minutes until warm and soft, ready for serving.
- Serve the fajitas: Assemble the fajitas by spooning the chicken and pepper mixture onto tortillas. Garnish with fresh cilantro and optional toppings like sliced avocado, sour cream, or salsa for extra flavor.
Notes
- For a spicier fajita, increase the cayenne pepper or add a dash of hot sauce.
- Use corn tortillas for a gluten-free option.
- If you prefer, chicken thighs can be used instead of breasts for a juicier result.
- Shaking the air fryer basket halfway through cooking helps ensure even browning and cooking of ingredients.
- Leftovers can be stored in an airtight container in the refrigerator for up to 3 days.
