Ingredients

Main Ingredients:

  • 2 tablespoons vegetable oil
  • 1 1/2 pounds boneless skinless chicken thighs (cut into bite-sized pieces)
  • 1 medium onion (diced)
  • 3 cloves garlic (minced)
  • 1 tablespoon fresh ginger (grated)

Spices:

  • 1 teaspoon ground cumin
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon cayenne pepper

Additional Ingredients:

  • 1 medium sweet potato (peeled and cubed)
  • 1 red bell pepper (diced)
  • 1 (14.5 oz) can diced tomatoes
  • 1/2 cup natural peanut butter
  • 3 cups chicken broth
  • 2 cups chopped kale or spinach
  • Salt and black pepper to taste
  • Chopped roasted peanuts and cilantro for garnish (optional)

Instructions
