Description

Experience the flavors of the Mediterranean with this delightful Falafel Rice Stack. Layers of fluffy rice, crispy falafel, fresh salad, creamy hummus, and tangy tzatziki sauce come together in a harmonious dish that’s sure to become a family favorite.


Ingredients

Rice:

1 cup uncooked basmati or jasmine rice
1 3/4 cups water or vegetable broth

Falafel Balls:

12 falafel balls (store-bought or homemade)

Salad Topping:

1 cup chopped cucumber
1 cup diced tomato
1/2 cup red onion, finely diced
1/4 cup chopped fresh parsley
1/4 teaspoon salt
juice of 1 lemon

Additional:

1 tablespoon olive oil
1/2 cup hummus
1/4 cup tzatziki or tahini sauce
crumbled feta cheese (optional)
lemon wedges for serving


Instructions

  1. Cook the Rice: In a medium saucepan, bring water or broth to a boil. Add rice, simmer for 15–18 minutes, then let sit covered for 5 minutes.
  2. Prepare Salad Topping: Combine cucumber, tomato, red onion, parsley, salt, and lemon juice in a bowl.
  3. Cook Falafel: Heat olive oil in a skillet, cook falafel balls until golden and heated through.
  4. Assemble Stacks: Place rice on plates, top with falafel, salad mixture, hummus, and tzatziki or tahini sauce. Optionally, add feta and serve with lemon wedges.

Notes
