Ingredients
Rice:
1 cup uncooked basmati or jasmine rice
1 3/4 cups water or vegetable broth
Falafel Balls:
12 falafel balls (store-bought or homemade)
Salad Topping:
1 cup chopped cucumber
1 cup diced tomato
1/2 cup red onion, finely diced
1/4 cup chopped fresh parsley
1/4 teaspoon salt
juice of 1 lemon
Additional:
1 tablespoon olive oil
1/2 cup hummus
1/4 cup tzatziki or tahini sauce
crumbled feta cheese (optional)
lemon wedges for serving
Instructions
- Cook the Rice: In a medium saucepan, bring water or broth to a boil. Add rice, simmer for 15–18 minutes, then let sit covered for 5 minutes.
- Prepare Salad Topping: Combine cucumber, tomato, red onion, parsley, salt, and lemon juice in a bowl.
- Cook Falafel: Heat olive oil in a skillet, cook falafel balls until golden and heated through.
- Assemble Stacks: Place rice on plates, top with falafel, salad mixture, hummus, and tzatziki or tahini sauce. Optionally, add feta and serve with lemon wedges.
Notes
- Opt for brown rice or quinoa for added fiber.
- For a vegan twist, omit feta and use dairy-free sauce.
