Chewy, naturally sweet, and protein-rich energy balls made with Medjool dates, oats, and nut butter. Perfect for on-the-go snacking or a quick pre/post-workout boost.
Ingredients
- 1 cup Medjool dates, pitted
- 1 cup rolled oats
- 1/2 cup nut butter (almond, peanut, or cashew)
Instructions
- If dates are dry, soak in warm water for 5–10 minutes. Drain and remove pits.
- In a food processor, blend dates, oats, and nut butter until crumbly but sticky. Scrape down sides as needed.
- Roll mixture into tablespoon-sized balls. Dampening your hands with water can help prevent sticking.
- Refrigerate for at least 30 minutes to firm up before serving.
Notes
- Optional garnishes: roll in shredded coconut, chia seeds, or cocoa powder for extra flavor and visual appeal.
- Substitute sunflower seed butter or tahini for a nut-free version.
- Add chocolate chips, dried fruits, or spices like cinnamon to customize.
