Description

Chewy, naturally sweet, and protein-rich energy balls made with Medjool dates, oats, and nut butter. Perfect for on-the-go snacking or a quick pre/post-workout boost.

Ingredients

  • 1 cup Medjool dates, pitted
  • 1 cup rolled oats
  • 1/2 cup nut butter (almond, peanut, or cashew)

Instructions

  1. If dates are dry, soak in warm water for 5–10 minutes. Drain and remove pits.
  2. In a food processor, blend dates, oats, and nut butter until crumbly but sticky. Scrape down sides as needed.
  3. Roll mixture into tablespoon-sized balls. Dampening your hands with water can help prevent sticking.
  4. Refrigerate for at least 30 minutes to firm up before serving.

Notes

  • Optional garnishes: roll in shredded coconut, chia seeds, or cocoa powder for extra flavor and visual appeal.
  • Substitute sunflower seed butter or tahini for a nut-free version.
  • Add chocolate chips, dried fruits, or spices like cinnamon to customize.
