Description

A quick and hearty one-pan meal featuring crispy potatoes, tender cabbage, and golden seared kielbasa, perfect for busy weeknights.

Ingredients

  • 4 medium potatoes, peeled and chopped into bite-sized pieces
  • Salt and pepper to taste
  • 2 tbsp refined coconut oil or light olive oil
  • 1 medium onion, sliced
  • 3 cloves garlic, minced
  • 12 oz kielbasa, sliced thin
  • 1/2 head green cabbage, sliced into ribbons
  • 23 tbsp water

Instructions

  1. Peel and chop the potatoes into bite-sized pieces. Toss with salt and pepper in a microwave-safe bowl and microwave for 4 minutes. Stir, then microwave for another 2–4 minutes until fork-tender.
  2. While potatoes cook, heat oil in a large skillet over medium-high heat. Add sliced onions and sauté until softened and slightly browned.
  3. Add minced garlic and kielbasa. Cook for another 3 minutes until sizzling and golden.
  4. Add cooked potatoes to the skillet. Toss to coat and let them sit undisturbed for a few minutes to get crispy edges. Stir occasionally.
  5. Add cabbage and season with salt and pepper. Toss together, add a splash of water, cover, and steam for about 2 minutes until the cabbage is bright green and wilted.
  6. Taste and adjust seasoning. Serve hot.

Notes

  • Microwaving the potatoes first ensures the dish cooks quickly.
  • Letting potatoes brown undisturbed adds crisp texture.
  • Slice kielbasa thin for better browning and flavor.
  • Do not overcook the cabbage; keep some bite for texture.
