shahi mushroom masala curry has very delicious taste. The shahi masala gravy will give nice cream texture to the mushrooms. I am showing easy version of shahi mushroom recipe. Prepare the curry with fresh mushrooms, so that the curry will have an excellent taste.

When ever I bought mushrooms from market every time I used to prepare mushroom gravy recipe for chapati rice roti, but last time I did this shahi mushroom recipe whole family enjoyed a lot.

Before starting the shahi mushroom curry process first soak the cashews as they have to be soak in milk for ½ hour, if you can’t spare that much time no worries you can soak them for 15 minutes or soak them in warm milk for 10 minutes. Any way you can prefer on your choice.

This shahi masala gravy is perfectly suits for mushrooms & paneer. Shahi mushroom recipe is an excellent side dish for rice / chapati  / naan  / any roti / poori.

Ingredients for shahi mushroom:

  • Mushrooms –  250 grams
  • Onions – 3 medium
  • Tomato – 1 big
  • Cashews – 15
  • Cardamom – 2 pods
  • Cloves – 4
  • Ginger & garlic – 2 inches & 5 pods
  • Coriander seeds –  ½ tbsp
  • Cumins seeds –  ½ tbsp
  • Milk – 6  – 7 tbsp
  • Salt – 1 ½ (as per your taste)
  • Chilly powder –  1- 1 ½ tbsp(as per your taste)
  • Oil – 3 tbsp
  • Water – ½  cup
  • Turmeric powder –  1/4th tbsp
  • Sugar – a little bit

  1. Soak cashews in milk for ½ hour.If you can’t spare that much time no worries you can soak them for 15 minutes or soak them in warm milk for 10 minutes. Any way you can prefer on your choice

2.Wash & chop the mushrooms into pieces (chop them along with stems).If you don’t want stems in the mushroom curry then remove the stems and chop them.

3.To make curry paste, take a mixy jar add cumin seeds or jeera, coriander seeds, cardamom seeds(remove the shell of elachi), salt, chilly powder, cloves, turmeric powder, onions, ginger & garlic, sugar and make them into fine paste with the help of water. Make sure the gravy should not have any small masala particles.

4.Heat a mini pressure cooker or kadai, add oil & above gravy, fry the gravy for 4 minutes.

5.Blend the tomatoes, sugar & cashews along with milk into puree texture in the same mixy jar.

6.Now add tomato & cashew nut puree & fry until it oozes out oil from its surroundings (it may take 3 minutes).

Now add mushroom pieces and fry for few seconds.

7.Now add water and pressure cook for 2 – 3 whistles.

8.Enjoy this easy & rich shahi mushroom with naans / rotis  / rice / poori.

Note on mushroom masala sabzi:

  • If you have less time then soak cashews for 15 minutes.
  • If you prepare this curry in kadai then you need more quantity of water (more than ½ glass).
  • You have to stir the curry for every 2-3 minutes until mushroom pieces gets cooked.
