The main taste of the biryani recipe lies in the biryani masala. Add sufficient onions to get nice taste and flavor to the biryani recipe. I have added 4 veggies to the biryani, you can go ahead and add some more veggies to the vegetable biryani recipe like beans, cauliflower, beet root or your favorite veggies. You can pack this vegetable biryani for lunch boxes too.

How to make vegetale biryani recipe

  1. Wash & soak the basmati rice for ½ hour by adding 2 cups of water.
  2. Chop the onions into rings.
  3. Wash & chop the capsicums into small cubes.
  4. Wash & peel the skin of carrot & potato & chop them into small cubes.
  5. Take a mixy jar add coconut pieces, coriander seeds, cumin seeds, poppy seeds, shahjeera, ginger & garlic & make them into fine paste with the help of water.
  6. Heat a kadai add ghee, add cloves, flower, cardamom, biryani leaf, cinnamon stick & fry for few seconds.
  7. Now add onions , turmeric powder, salt & fry them until onions became little golden color.
  8. Now add water and cover with lid.
  9. And cook the biryani on medium flame for 20 – 25 min.
  10. After biryani was cooked, switch off the flame & set aside for 10 min & serve.
  11. Now you can enjoy this awesome vegetable biryani with any raita.

vegteable briyani ingredients (1 cup = 250 ml)

  • Basmati Rice – 1 ½ cup
  • Onion – 3 medium
  • Coconut pieces – 20 – 25 medium pieces (1/2 shell of medium coconut)
  • Capsicum – 2 medium
  • Potato – 2 small
  • Carrot – 2 small
  • Boiled Green peas – 6 tbsp

biryani masala ingredients

  • Cashew nuts – 12 – 14
  • Cumin seeds – 1 ½ tbsp
  • Coriander seeds – 1 ½ tbsp
  • Poppy seeds – 2 tbsp
  • Shahjeera – 1 tbsp
  • Turmeric powder – more than ½ tbsp
  • Ginger & garlic – 2 inches ginger and  8 garlic pods (my garlic pods are thin and medium)
  • Salt – 2 tbsp (as per your taste)
  • Chilly powder – 2 tbsp (as per your taste)
  • Cinnamon stick- 3 inches (1 stick)
  • Cardamom – 4 pods (for 1 cup of basmati rice add 2 cardamom )
  • Cloves – 10 cloves (for 1 cup of basmati rice add 6 – 8 cloves)
  • biryani leaf – 1 full
  • Flower – 1full
  • Ghee – 5 tbsp
  • Water – 3 cups

  8. Now add above biryani gravy paste, chilly powder and fry until it oozes oil from it surroundings.

  9. Now add chopped vegetable & boiled green peas and fry them for 2 min.

  10. Now add soaked basmati rice (without water) and stir gently once.

  11. Now add water and cover with lid.
  12. And cook the biryani on medium flame for 20 – 25 min.

    • Soak the basmati rice for atleast ½ hour to get nice individual grains of rice.
    • biryani should be cook on medium flame only.
