  1. Long brinjals – 3 – 4
  2. Onions – 3 medium
  3. Coriander seeds – ½ tbsp
  4. Cumin seeds – ½ tbsp
  5. Turmeric powder – ½ tbsp
  6. Chilly powder – 1 ½ tbsp (as per your taste)
  7. Tamarind – 2 inches
  8. Sugar –1 tbsp
  9. Salt – 1 ½ tbsp (as per your taste)
  10. Oil – 3 tbsp
  11. Water –1/4th cup

  • Wash the brinjals thoroughly.
  • Cut the each brinjal into 6 – 7 (1 ½ inch size) pieces and now slit each piece into 4 pieces.

  • Chop the onions into medium size pieces.
  • Take a mixy jar add onions, cumin seeds, coriander seeds, salt, chilly powder, turmeric powder, sugar, tamarind & make them into fine paste.

  • Heat a kadai / mini pressure cooker add oil & after oil gets heated add above gravy and fry until it oozes out oil from its surrounding.

  • Now add brinjals & fry for 2 min.

  • Add water and pressure cook for 3 whistles.
