In my childhood whenever I went to sweet shops surely I will buy kaja, badhusha, kova.The important step is frying the khaja in correct oil temperature and they should fry on medium flame so that inner & outer parts of the khaja cook perfect.

Start the process by kneading the dough and rest it for few min. In the mean time heat the oil for deep frying & prepare ghee mixture. After that prepare sugar syrup, now time to roll the chapatis and spread this ghee mixture on top of the chapati and keep another rolled chapati on top of that one.

And roll & cut into 2 inche pieces and deep fry them and immerse in sugar syrup. Leave them for 40 min in syrup and enjoy.This khaja sweet is prepared during festivals, marriage functions or some special occasions.

kaja sweet ingredients
- All purpose flour / Maida – 1 cup & 3 tbsp for dusting
- Sugar – 1 ½ cup
- Rice flour – 3 – 4 tbsp
- Ghee – 2 tbsp for dough & 3 tbsp for dusting
- Oil for deep frying
- Baking soda – a pinch
- Cardamom – 1/4th tbsp
- Salt – a pinch
- Water – 1/4th cup
- Lemon juice – ½ tbsp
how to make madatha kaja with step by step photos:
- Take a bowl add maida, baking soda, salt, maida and mix well.

- Knead the dough by adding water like a chapati dough (add little by little water, other wise dough will become runny).
- Knead the dough for atleast 10 min (dough should be soft).

- Rest the dough for 20 min (if you are not having time then rest for 10 – 15 min).
- Divide the dough into equal number of small round balls.

- In the mean time take a small bowl add ghee (melted ghee), rice flour & maida and mix like a little bit thin paste (if mixutre is not thin add little more ghee).

- In the mean time heat oil for deep frying in wider kadai.
- Take a bowl / kadai (keep wider one) add sugar, water and heat the syrup.

- After you switched on the stove immediately add lemon juice to avoid crystallization of sugar.

- Once sugar is dissolved in water add cardamom (you can add powder or just pods).
- Boil the syrup until you get nice sticky texture (switch off the stove before you get single strand consistency).

- Now keep this ball on rolling board and roll it (if you want sprinkle little flour while rolling).
- Roll like a thin & long chapatti (so that khaja will get multi layers).

- Keep this rolled chapati aside and roll another dough as same size as first chapati.
- Now sprinkle the ghee mixture & spread it evenly on chapati, now on top of this chapatti keep the other chapati (which we kept aside).

- Now fold the two chapatis and cut it into 2 inches pieces evenly.

- Now repeat the same for the rest of the dough.
- Now test the oil is in correct temperature or not for frying khajas by adding a small pinch of dough, if that comes up in few seconds means oil is perfect for frying.
- Now add khajas one by one and fry them on medium flame until you get nice golden color, other wise outer part will get golden color and the inner part remains uncooked.

- While frying the khaja rotate the oil with long spoon to get even color to all the kajas.
- After madatha kajas got golden color remove them and add into the sugar syrup.

- Repeat the same for the rest of the khajas.
- Now add all the remaining fried kajas.
- After adding the kajas immerse them into syrup & press them for 30 seconds in sugar syrup (so that kaja will observe sugar syrup).
