Bottle gourd curry is very delicious curry. Last time when I bought bottle gourd or lauki or doodhi or sorakaya from market then I decided to do different & simple sorakaya curry with this healthy vegetable as it is summer. this lauki sabzi can have with rice roti chapati. this sorakkai poriyal has nice sour and sweet flavors. in telugu this curry is known as sorakaya curry. this lauki sabzi has very simple process to prepare. if you prepare this lauki ki sabzi once regularly you will prepare this bottle gourd curry.

Then I got a thought to do like bottle gourd stew curry which will goes excellently with dal rice or curd rice or roti or chapati. Even though laukisabzi has very simple process but the taste is very delicious. As it is summer we all of us want quick & healthy curries, so this bottle gourd curry is perfectly suits for this summer.

sorakaya curry has very quick & simple process. This soarakaya curry is so help full in summer season, when we are so tried or not having that much time to cook. This bottle gourd curry will be like stew which will have thick besan gravy. As we are adding tamarind and sugar, the gravy and bottle gourd pieces will get nice tasty flavors.

The lauki sabzi gravy will become little bit thicken as we are adding besan or bengal gram mixture to the curry. Just start the process by chopping the bottle gourd or doodhi or lauki or sorakaya into cubes and chop the green chilies, onions too. Now heat the mini cooker add oil.

After oil gets heated add onions & salt fry for few seconds then add all remaining ingredients and water and cook for 3 whistles. In the mean time prepare besan mixture like I previously shown for besan chutney. After cooker was cooled remove the lid and add this besan mixture and boil it for 7 minutes or until the bottle gourd curry gets little bit thicken. Now time to enjoy this lauki sabzi.

BOTTLE GOURD CURRY WITH GROUND NUT MASALA

ingredients used in lauki sabzi

  1. bottle gourd or doodhi or lauki or sorakaya – 10 inches
  2. Onions – 2 medium
  3. Tamarind – 2 ½ inches
  4. Sugar – 3/4th tbsp
  5. Turmeric powder – ½ tbsp
  6. Green chilies – 5 medium (as per your taste)
  7. Salt – 1 ½ tbsp (as per your taste)
  8. Besan – 3 tbsp
  9. Oil – 3 tbsp
  10. Water – little bit more than 3/4th cup and 5 – 6 tbsp for besan

  • Wash & peel the skin of bottle gourd.
  • Chop the bottle gourd into medium size pieces (cut the bottle gourd horizontally into two halves, now cut the each half part again into three parts, now cut each part into cubes).
  • Chop the onions into medium size cubes.
  • Wash & chop the green chilies into 3 pieces.
  • Heat a mini pressure cooker or kadai, add oil.
  • Now add the onions & salt fry for 2 min.
  • Now add green chilies, bottle gourd, turmeric powder, tamarind, sugar & fry them all for 4 min.

  • Now add 3/4th cup of water and pressure cook the curry for 3 whistles.

  • Mean time take Bengal gram flour in small bowl and mix the flour with water like a thin liquid (without any lumps).

  • Now make the pressure cooker to cool down then open the lid.
  • Heat the pressure cooker and add the besan mixture into it and make it boil for another 7 min or the curry gets little bit thicken (stir in between).

  • Now switch off the flame and serve with dal.

    Bottle gourd curry for rice roti chapati

Bottle gourd curry will excellently goes as a side dish along with mudhappapu / dal rice (just cook the toor dal in pressure cooker for 4 whistle and add salt and mix thoroughly, now mix this dal into rice) / curd rice / roti.

  • 10 inches Bottle gourd
